Our top three tips are: 1) Batch cook to utilize everything you've bought and minimize food waste. 2) Bulk out your meals with pulses and vegetables to stretch out meat further. 3) Only buy what you need to reduce costs and waste. Don't forget to utilize your freezer; frozen vegetables are not only cheaper but are often packed straight from the farm, preserving more nutritional value.

I love shakshuka! It's a simple dish made up of tomatoes, mixed pulses, onions, spices, herbs, eggs, and a cheese (either feta or halloumi), drizzled with olive oil. This meal is super healthy, packed with protein, fiber, and nutrients. It's also super tasty, and you can add any extra vegetables to bulk it out and pack it with more nutrition. I like to have a piece of gluten-free sourdough with it to mop up the juices. You will get at least 2-3 servings out of one 400g tin of tomatoes and 1 tin of pulses. I love this for brunch—healthy, cheap, nutritious, and packed with flavor. Use dry spices like harissa, paprika, and herbs like oregano. It's one of my personal favorites.
